Kitchen comparisons are imperfect because salt and sand also vary. Use them only to identify the broad band. The brewer's manual, its basket or filter, and the actual brew behaviour matter more than whether a photograph calls the grounds “medium-fine.”

Why does grind size change extraction?

Grinding creates surface area. Smaller particles expose more coffee to water, so soluble material can move into the brew more quickly. Larger particles expose less surface area for the same mass and generally extract more slowly.

In a pour-over or drip brewer, grind also changes resistance. Finer particles can slow water passing through the bed; coarser particles can let it pass faster. In an immersion brewer such as a French press, all the grounds sit in water, so grind affects extraction and how readily the filter separates the liquid rather than controlling gravity flow in the same way.

That is why “finer makes stronger” is incomplete. Finer grinding can increase extraction, but it can also slow a pour-over, push more fine particles through a mesh filter or make a press difficult to plunge. Beverage strength also depends on the coffee-to-water ratio.

What grind should you use for French press?

Start coarse when following a typical French press recipe. Fellow's current French press method specifies a coarse grind with a four-minute brew. Our published French press method supplies the full ratio and timing context for adjusting that coarse starting point.

If the cup is thin and the press moves easily, try one step finer while keeping dose, water and time unchanged. If the cup is harsh, silty or difficult to plunge, try one step coarser and inspect whether the grinder is also producing many powder-like fines.

Never force a plunger. Stop if resistance becomes abnormal and follow the brewer's instructions. Hot liquid and a damaged or unstable carafe are not troubleshooting tools.

What grind should you use for pour over?

Begin with the specific dripper recipe. Fellow's Stagg dripper instructions use a medium-fine grind described as about the size of sea salt. That description belongs to that recipe and dripper, not every pour-over design.

Watch total drawdown and the coffee bed. If water races through and the cup tastes thin, move one step finer. If water stalls and the cup tastes harsh or drying, move one step coarser. Pour pattern, filter fit and dose also change flow, so hold them steady during the comparison.

A grind chart cannot override the dripper's capacity. Do not add more coffee than the brewer or filter safely holds merely to slow the flow.

What grind should you use for AeroPress?

AeroPress's current grind guidance recommends medium-fine as its general starting point, between drip and espresso grind. It also explains that coarser grounds can allow faster drip-through and fine grounds can make pressing harder.

That is a particularly good example of why method names alone are insufficient. AeroPress recipes vary in water, dose, steep and filter, so use the grind specified by the recipe in front of you. Press gently and stop if resistance is excessive rather than treating force as a way to rescue a too-fine grind.

What grind should you use for automatic drip?

Many bags of pre-ground coffee use a medium grind intended for common drip machines, and AeroPress's guide describes store-bought pre-ground coffee that way. Your machine's manual remains the better authority because basket shape, filter and batch size affect flow.

If the filter basket threatens to overflow, switch off the machine if its manual permits, keep clear of hot liquid and follow its fault instructions. Do not reach into a running brewer. After it is safe and cool, check the filter fit, dose and grind. A finer grind may have slowed the bed too much, but a folded filter or excess coffee can create a similar problem.

Why grinder numbers do not transfer

A recipe that says “setting 12” is incomplete unless it names the grinder model and often its burr or calibration state. The number is a position in one mechanism, not a standard unit of particle size.

Build your own reference:

  1. Choose the maker's broad grind range.
  2. Record the grinder model and current setting.
  3. Photograph a small sample beside the same reference object under the same light.
  4. Brew with a fixed dose, water amount, temperature and method.
  5. Record flow or plunge behaviour, total brew time and taste.
  6. Move one or two marked steps and repeat.

The resulting note is more useful than copying another grinder's number. It describes what your equipment did with your recipe.

How do you dial in by taste?

Separate concentration from extraction first. If the coffee tastes balanced but simply too light or too heavy, adjust the coffee-to-water ratio. If strength is acceptable but the cup tastes sharply sour, hollow, harsh or drying, grind is a sensible variable to test.

Use small changes:

Taste after the cups cool to a similar drinking temperature. Do not change grind, dose and water temperature in the same attempt; a better cup will not tell you which change earned it.

What if your grinder makes both chunks and powder?

A broad mixture can extract unevenly. The smallest particles extract quickly and can block a filter; the largest pieces extract more slowly. AeroPress notes that a dull grinder can produce varied particles and that fines can obstruct spaces between larger grounds.

A burr grinder is designed to create a narrower particle range than a blade that chops coffee for a set time, but no grinder produces perfectly identical pieces. Before replacing equipment, clean and maintain the grinder exactly as its manual directs, check whether the burrs are seated correctly and avoid grinding beyond its rated duty.

Never put fingers or tools into a connected grinder. Unplug it and follow the manual before opening any user-serviceable part. Electrical faults and damaged cords belong with the manufacturer or a qualified repair service.

How should you buy pre-ground coffee?

Name the brewer, not only the broad grind. Ask for coffee ground for your specific French press, automatic drip machine or pour-over dripper. If the seller offers only espresso, filter and French press, choose the closest method label and buy a modest amount first.

Pre-ground coffee removes the option to adjust particle size at home, so use dose, water temperature and brew time within the method's instructions. If the coffee is dramatically mismatched to the brewer, changing the bag is more predictable than forcing the equipment around it.

The practical starting rule

Use coarse for a typical French press, medium for common drip, medium-fine for many pour-over and AeroPress recipes, and fine only in equipment designed for it. Then stop looking at the chart. Watch the actual flow or plunge, taste the coffee and make one small grinder change. Your recorded setting and brew behaviour become the useful chart for your kitchen.
