Why does coffee taste sour or bitter?
Sour coffee often points to too little effective extraction; bitter, drying coffee often points to too much. Treat that as a troubleshooting hypothesis, not a diagnosis. The bean and roast already carry acidity and bitterness, while ratio changes strength. Taste the cup at a comfortable temperature, confirm the recipe, then change grind first: finer for a thin sour cup, coarser for a harsh bitter one.
Do not change coffee dose, grind, temperature and time together. A better second cup is useful only when you know which adjustment made it better.
What is the difference between sour and bitter?
Sourness resembles the basic taste of lemon or plain yoghurt: bright, tart and sometimes mouth-watering. Bitterness resembles unsweetened cocoa, tonic water or a dark leafy vegetable: it often lingers toward the back of the mouth. Astringency is different again. It is the drying, rough sensation that makes the mouth feel grippy.
Coffee can contain all three. Pleasant acidity may be lively and fruit-like rather than sharply sour. Pleasant bitterness can add structure rather than dominate. The problem is balance, not the mere presence of an acidic or bitter sensation.
Let the coffee cool before judging. Heat changes what is easy to perceive, and two cups compared at different drinking temperatures are not a fair test.
Does sour always mean under-extracted?
No. Under-extraction is a useful first suspect when a brew is sour, thin and short-lived, especially when it also runs or finishes faster than the recipe. But origin, roast, processing, water and serving temperature can also shape acidity.
Research from the UC Davis Coffee Center illustrates the complexity. Its summary of work on titratable acidity and perceived sourness reports that sour intensity correlated more strongly with titratable acidity than with pH, and that preferences differed among consumers. That is a stronger account than “acid equals bad extraction.”
Use the whole pattern:
- Sour plus thin plus fast suggests testing a finer grind.
- Sour but sweet, aromatic and complete may be the coffee's intended acidity.
- Sour plus very strong may involve ratio or an uneven brew, not simply too little extraction.
- A flavour that appears only after the bag or equipment changes may start with that change.
Does bitter always mean over-extracted?
No. Dark roasting can contribute bitter, burnt or smoky flavours before brewing begins. Too much coffee for the water can make bitterness feel more intense by increasing beverage strength. Old residue in a brewer or grinder can also make a fresh recipe taste stale and harsh.
Over-extraction is a useful suspect when bitterness arrives with a drying finish, a stalled pour-over or a brew that ran much longer than the recipe. Move one step coarser and keep everything else stable.
A UC Davis-led drip-brew temperature study found that brew strength and extraction yield had larger sensory effects than brew temperature when the researchers compared controlled brews at 87°C, 90°C and 93°C. The study does not cover every method or bean, but it is a good warning against treating temperature as the only bitterness control.
Which adjustment should you try first?
Confirm the coffee-to-water ratio and actual brew time, then adjust grind by one small step.

What if the coffee is both sour and bitter?
That combination often signals uneven extraction rather than a neat average. Powder-like fines may extract quickly while large pieces lag behind. In a pour-over, water may find easy channels through part of the bed while other grounds remain poorly wetted.
Check the basics:
- Inspect the grounds for an extreme mix of powder and chunks.
- Level the coffee bed before pouring.
- Wet all grounds according to the brewer recipe.
- Keep the filter seated and within its capacity.
- Use a gentle, repeatable pour or agitation pattern.
- Clean the grinder and brewer as their manuals direct.
Do not try to solve an uneven brew with a large temperature or dose change. Restore even preparation first.
How does roast level muddy the picture?
Light, medium and dark are broad labels rather than laboratory categories. A lighter roast may present more noticeable fruit-like acidity; a darker roast may present more roast-driven bitterness, cocoa, smoke or char. That does not make every light coffee sour or every dark coffee bitter.
The bean can therefore resemble the fault you are trying to diagnose. Brew a new coffee with the roaster's recipe when one is available. If the cup is balanced but unfamiliar, the flavour may be intentional. If it is thin, harsh or structurally incomplete, adjust the extraction.
UC Davis research on full-immersion coffee across roast levels and temperatures found that sensory outcomes varied with roast, origin and temperature. Its experimental conditions should not be turned into a universal home recipe. The useful point is that roast and brewing interact.
Should you change water temperature next?
Change temperature after ratio, grind and time are known. Hotter water can increase extraction rate; cooler water can reduce it. But a temperature change can overlap with grind and contact-time changes, so it is easy to lose track.
If a finer grind improves a sour cup but creates flow trouble, return to the prior grind and try a modestly hotter brew within the equipment instructions. If a coarser grind improves bitterness but makes the cup hollow, return and try a modestly cooler brew. Record the result.
Never use water hotter than the brewer, kettle, filter or vessel is designed to handle. Hot-water burns are a real hazard, not part of taste experimentation.
A two-cup troubleshooting routine
Use two consecutive brews, not two simultaneous cups made with different uncontrolled pours.
For cup one, write down coffee, water, grind setting, temperature and total brew time. Mark the result with three separate notes: concentration, sour-to-bitter balance and mouthfeel.
For cup two, change one variable:
- one grinder step finer for thin and sour;
- one step coarser for harsh and drying;
- half a tablespoon or a small measured dose change only when flavour is balanced but strength is wrong.
Taste both at a similar comfortable temperature. Keep the better recipe, or move halfway back if the second change overshot. That small record will teach you more than a list of flavour words without measurements.
The practical answer
For a sour, thin cup, try one step finer. For a bitter, drying cup, try one step coarser. Confirm ratio and brew time first, and do not confuse strength with extraction. When the cup has both sour and bitter edges, investigate uneven grinding or wetting before pushing the entire recipe farther in either direction.
